At Webb’s Grainworks all of our spirits and beer are made from grain. For instance, our whiskey is 72% Corn, 18% Rye and 10% Malted Barley. Occasionally we use more specialized grains like red wheat and millet. We also use many of these same grains in beer production, such as barley, rice and corn. Furthermore, the kitchen produces all its bread in-house daily just to drive the point home. Webb’s Grainworks, we work with grain.
CIVILIZATION BEGINS WITH DISTILLATION
The barrel is arguably the most important part of bourbon whiskey production. All whiskey is initially clear as it comes out of the still, but when it goes into the oak barrel, that’s when the magic happens. In bourbon for instance, 100% of the color and up to 60% of the flavor comes from the barrel. All the notes of cinnamon and vanilla and toasty tobacco are the product of barrel aging. Bourbon must be aged in a new oak barrel for a minimum of 2 years, and in that time, all the flavor and color is being extracted from the wood, while the charred lining of the barrel absorbs any off-flavors left over from fermentation. Here at Webb’s, we fill a brand new American White Oak barrel once a week, all proudly sourced form our cooperage partner in West Virginia, the West Virginia Great Barrel Company.

Constantly on the grind.
Our process begins by grinding the grain. We grind all of our grain in house on a behemoth RMS 3-roller grinder we have fondly named, Captain Crunch. From there, the crushed grain is conveyed by auger to our cooker or brewhaus to be transformed into spirits or beer. Our spirits are produced in a custom built 250 gallon copper Vendome hybrid pot-still, and our beer is produced in a 5 barrel brewhaus from Premier Stainless. Everything is then bottled or canned and labeled right here at Webb’s.
